I have another post I’m working on but I totally mindblocked in the middle of it. Oops.
So instead I’m pondering why I love hot tea so much.
I lived in Wilmington NC from 2002-2006, and I learned to LOVE Sweet Tea. And northerners, whatever shite McDonald’s sells is NOT sweet tea. If it doesn’t hurt your teeth, make your dentist cackle when it’s made, and make your teeth cry out for anything but sugar, “it aren’t sweet tea”.
It’s best made with.. hm. I’m trying to think. I want to say 3 cups of sugar per gallon. That might be incorrect.
And yes, you’re reading that right.
The secret is – you mix the sugar in while it’s still hot, before you cool it off. It doesn’t crystallize, it dissolves fully, and it makes sweet, sweet love (pun intended) with the ice in your drink before you drink it. (and yes, it’s best served very very cold/over ice).
But for hot tea, I really have Earl Grey, then English Breakfast, then everything else. Green is awesome, and I have a new shiny tea infuser + a TON of random teas, so this could entirely change.
But mostly, I like Earl Grey. And I have to have honey. And if I can, natural sugar.
i don’t know why, but it really makes me feel better as a human being.
And that, to me, is hawt.
